Stuffed Halibut Cheeks

Ingredients

  1. 5 garlic cloves, minced
  2. 1/2 cup chopped chives
  3. 1/2 pound crabmeat
  4. 1 cup cream cheese
  5. Salt and pepper
  6. 10 halibut cheeks
  7. Olive oil, to taste

Instructions

  1. Combine the first 5 ingredients. Cut pockets into halibut cheeks, stuff the garlic mixture into the pockets, then drizzle olive oil on the cheeks.
  2. Place on grill and cook for 3 minutes on each side. Serve immediately.

I made this a couple of days ago, we found it way too rich and a waste of expensive halibut cheeks (over $20 a pound) and crab ($15 a pound). I even used reduced fat cream cheese. I modified the recipe to fit the amount of halibut cheeks I had, but this recipe tasted gourmet. This will definately be made again and again and will go into my ‘company coming’ repetoire.
