Spicy-Spiked Iced Tea

Ingredients

  1. 4 orange Pekoe tea bags
  2. 3 cups boiling water
  3. 5 to 6 cups of ice cubes, plus additional ice to serve
  4. 1/3 cup superfine sugar, plus more if desired
  5. 1 lemon, juiced
  6. 1 orange, juiced
  7. 1 cinnamon stick
  8. 10 whole cloves
  9. 8 (1 1/2-oz) shots of light rum
  10. Lemon wedges, for garnish

Instructions

  1. Place tea bags in a small bowl or large measuring cup/batter bowl. Add 3 cups boiling water and steep tea 5 minutes.
  2. Fill a large pitcher with ice cubes, 5 to 6 cups. Pour sugar over ice. Add lemon and orange juice, cinnamon stick and cloves. Pour hot tea over ice and stir with wooden spoon until most of the ice dissolves and tea has been quick-cooled. Serve or chill until ready to serve.
  3. When ready to serve, pour into a tall glass filled with more ice, a shot of light rum. Pour spicy iced tea through a strainer to remove the cinnamon, cloves and fruit pulp/pits. Fill glass with tea. Serve tea with extra sugar and lemon wedges.

I make this tea for just about every holiday get together with the family, at their request. I make it southern-style, which means a ton of sugar lol. The spices and the citrus tastes excellent with the tea. Of course the rum doesn’t hurt it either. It tastes great hot too, after all of the flavors meld. Thanks Rachael for a beverage that is now a classic with my friends and family!

this was good. i also found that if you take a peach tea bag….or some flavored iced tea mix that you can add some peach schnapps to and use a 92 proof navy rum that it is sweeter and not as spicy. does make a refreshing punch too!!!

This is such a great refreshing drink. You’ll want to double the recipe if you have a lot of people because it doesn’t make that much and you’ll want to drink every last drop of this. Make it on a hot summer day or for a tailgating party.

I absolutely love this recipe. I have made it around 4 times already this summer. It’s not very sweet so if you’re looking for a sweet southern tea, this is definately not it. I actually add an extra orange and an extra lemon. That makes the taste of the tea better. It’s very refreshing and what’s good about this recipe is that it’s tastes good even without the alcohol. Don’t get me wrong, it tastes really good with the rum, but it’s such a great recipe that it’s not the alcohol that makes it tastes so good, it’s the tea recipe itself.

This was just the perfect departure from regular everyday Iced Tea. Amazing how just the addition of a few spices hanging around my kitchen pretty much waiting for the holidays could make such an impact. I did substitute Splenda however for the sugar so I could serve it to my Diabetic mother and carb counting son but it was worked great producing a not too overpoweringly spicy or sweet tea.
