Ingredients
- 3 hearts romaine lettuce, coarsely chopped
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon prepared Dijon mustard
- 1 teaspoon chili powder
- 1/2 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- Blue corn, black bean or other tortilla chips, for garnish
- 1/4 cup smoked cheddar and 1/4 cup pepper Jack, for garnish, optional
Instructions
- Chop and place romaine in a large salad bowl. Whisk together garlic, lemon juice, Dijon mustard and chili powder in a small bowl. Continue whisking while streaming in extra-virgin olive oil. When dressing is combined, toss Romaine salad with dressing and garnish salad with broken tortilla chips, smoked cheddar and pepper Jack cheese. Season with salt and pepper and toss again, then serve.

The mix of the lemon, chili powder, and olive oil is wonderful. Very easy to make. I doubled the garlic to zest it up a touch more. We broiled up some salmon to serve atop this salad (brushing a bit of dressing for its last minute of cooking). It was a fantastic taste combo!
Extremely flavorful! You can also put it in a wrap with steak, sliced almonds and ranch dressing. Yummy!!
This is a very fast and easy side for any meal. What’s cool is it can handle being simple or adding a couple more toppings you’re in the mood for and make it the main meal with a good crusty bread and a beer.

The first time I made this salad I added salt at the end like the recipe states, and it was way too salty. I think the chips are salty enough. The second time I made it I omitted the salt and it was just delicious! Diced avocado makes it even tastier. This salad is a perfect side for any mexican or southwestern style entree.
This salad was quick and easy to make. The dressing is soo tasy, the best salad dressing I have ever made.
