Smoked Sausage and Black-Eyed Peas

Ingredients

  1. 1 pound smoked sausage
  2. 1 cup chopped yellow onion (1 medium)
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon cayenne
  5. 4 cloves of garlic
  6. 5 sprigs of fresh thyme
  7. 4 bay leaves
  8. 3 teaspoons finely chopped parsley
  9. 8 cups chicken stock
  10. 1 pound black-eyed peas
  11. 1 tablespoon minced garlic
  12. 6 cornbread muffins
  13. 1 tablespoon chopped green onions

Instructions

  1. In a large pot, over medium heat, render the sausage for 5 minutes. Stir in the onions, salt, cayenne, garlic, bay leaves, thyme and parsley. Saute for 5 minutes, or until the onions are wilted. Stir in the chicken stock, peas and garlic. Bring the liquid up to a simmer and cook for 1 1/2 hours, or until the peas are tender. Spoon the peas and sausage in the center of a shallow bowl. Garnish with green onions. Serve with cornbread muffins.

Amazing! I did it in the instant pot by using the saute feature for the saute steps and then pressure cooking to cook the peas and it took me a bit more than a half an hour from begining of prep to finish. (I soaked the peas for 2 hours and pressure cooked 10 minutes on high with a 10 minute natural release followed by quick release, cuz mom life means the soak got cut short) There was extra liquid so if doing in the instant pot I’d recommend using 6 cups broth. I used all the ingredients called for and andouille sausage for the smoked sausage.

This was very appealing based solely on the ingredients. I made it without doing any shopping, so used Kielbasa but otherwise followed the recipe, although I only had three bay leaves left. It’s really delicious and will make it again. I did cut the salt to 1/4 t. because I was afraid it would be too salty … easier to add than take out! Put a scoop of brown rice in the bowl as well … very filling that way!

I’ve been using this recipe religiously since 2011. Everyone I serve this dish too absolutely raves about it. Before this recipe I did not black eyed peas (hopping Johns) at ALL. THIS RECIPE MAKES ME LOVE THEM. I make this a few times a year, however, without fail I make them on New Years Eve with my greens!
