Ingredients
- 1 8-ounce package cream cheese, at room temperature
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon horseradish, drained
- 1 tablespoon relish
- 2 cups grated Swiss cheese (about 8 ounces)
- 2 ounces deli-sliced corned beef, chopped
- 1/2 cup sauerkraut, drained, patted dry and chopped
- 1/4 cup chopped fresh chives
- Pumpernickel bread, for serving
Instructions
- Preheat the oven to 375 degrees F. Combine the cream cheese, mayonnaise, ketchup, horseradish and relish in a food processor and puree until smooth; transfer to a large bowl. Stir in the Swiss cheese, corned beef, sauerkraut and chives.
- Spread the dip in a 1-quart baking dish and bake until browned and bubbling, about 15 minutes. Serve with bread.

I make this all the time! I use 4-6 oz of corned beef though. Also if you can’t find Pumpernickel bread, I use Rye and

Made this again for the hundredth time. I tried to be more healthy and I used 1/3 less fat cream cheese and Mayo with avocado oil. Don’t do it!!! You can taste the difference. Stick to the full fat ingredients.
I’ve made this recipe several times and it’s always delicious! People that eat meat go crazy for this dip. I chop up several Dave’s Pickles, instead of adding relish, but otherwise I follow it exactly.

Does really only call for 2 oz of corned beef or is that an error? It sounds like a really small amount of meet for this dip?
Can you make the night before?
Couldn’t you add some thousand island dressing instead of ketchup?

This was a yummy in my tummy recipe!! So easy to make and so very delish!! I doubled the recipe and added 2 tb. of minced onion. Everyone loved it and if you are lucky enough it is even better the next day. Worked great with rye squares and crackers and even pretzels. This is a keeper for sure.
If you love reubens you will LOVE this dip! Took to work for everyone to try and it was a hit. Will make again for sure. Creamy, flavorful, and excellent piping hot on pumpernickel squares….I didn’t change the recipe at all except for I used leftover corned beef that we cooked the night before. A+ YUM
