Puff Pastry Apple and Raisin Strudel

Ingredients

  1. 1 teaspoon ground cinnamon
  2. 2 large Golden Delicious apples, peeled, cored and sliced 1/8 to 1/4-inch thick
  3. 1 lemon, juiced
  4. 1 cup raisins
  5. 1/4 cup sugar, plus 3 tablespoons
  6. 2 tablespoons cold butter, cut into small pieces, plus 2 tablespoons butter, melted
  7. All-purpose flour, for dusting
  8. 1 sheet frozen puff pastry, thawed

Instructions

  1. Position an oven rack in the center of the oven and preheat to 375 degrees F.
  2. In a medium bowl, toss the sliced apples with the lemon juice until the apples are thoroughly coated. Add the raisins, 1/4 cup sugar, and the 2 tablespoons cold cubed butter and toss well. Set aside.
  3. Lightly dust the counter or work surface with flour. Lay the puff pastry on top and dust the rolling pin with additional flour. Gently roll the puff pastry to 1/8-inch thickness.
  4. Spread the apple and raisin mixture over the bottom half of the puff pastry square leaving about 1-inch of space along the side edges. Fold the top half of the puff pastry over and pinch to seal the edges together.
  5. Brush the entire strudel with the melted butter and then sprinkle with cinnamon and remaining sugar. Using a serrated knife, make 3 diagonal slits across the top of the strudel.
  6. Place the strudel on a parchment lined baking sheet and bake for 40 minutes, rotating halfway through cooking, until the pastry is puffed and golden brown.

So easy and good! I would reduce the raisins to 1/2 cup next time, just to make them proportionate with the Apples, but the flavors mixing were so good!

I used the 2 granny smith apples but also added in 2 red anjou pears, peeled and diced.  Skipped the raisins and used brown sugar.  Amount of filling with the addition of pears meant 2 pastry sheets; I made 2 separate strudels rather than one big one.   Baked for 35 min and it came out perfect.  Will definitely be making again!

Recipe was great… I just tweaked a few things, first I used my favorite apple, Honey Crisp and I used 1/4 cup of pineapple juice and a squeeze of lemon only. I added cinnamon to the filling as well instead of just on top, and I excluded half the juice that was left because it was too wet the first time I tried it. I baked for 35 minutes instead of 40. It was a fast and delicious recipe I will use often !!! Thanks Food Network

Did this with my 9 year old lad, simple to make, tasted fantastic.  Reduced cooking time by 5 mins, but otherwise as is.  Perfect blend of tartness and sugar.  Yum.

this was great and super easy.  I put my apples down the middle and folded both halfs over to the center.  then when cooled I drizzled it with an east glaze. even my mother in law loved it

Really easy and delicious. I’d recommend cutting the raisins by half and adding cinnamon and a bit of nutmeg to the apples. I topped with icing and toasted pecans before serving. To toast pecans I just chop and toss them in a sauté pan with a little butter, sugar and salt until brown. One caveat while baking, use a rimmed pan in case some of the liquid escapes.

Great and easy recipe. I would make a few changes though. I found it hard to fit everything in, so I would chop up the apple more. As suggested in another post, I would reduce the raisins to a third of a cup, I couldn’t fit them all in, so I left some out, and there were plenty. After coating everything I pulled the apple out, so excess lemon and sugar was left behind. I would put the cinnamon in with the apple, by putting it on top, the pastry browns too quickly. It tasted delicious. Really only serves 4.
