Potato Salad “New Jersey” Style

Ingredients

  1. 2 pounds Yukon gold potatoes
  2. 3 hard boiled eggs, finely chopped
  3. 1/2 cup mayonnaise
  4. 1/2 medium yellow onion, finely diced
  5. 2 stalks celery, finely diced
  6. Kosher salt
  7. Freshly ground black pepper
  8. Sugar, to taste

Instructions

  1. Boil potatoes in skin and let cool. Slice into quarters. Add eggs, mayonnaise, onion, and celery and fold together. Season to taste with salt, pepper and sugar.

made this with any potato, half light mayo and half light miracle whip, red onion, and no sugar. added celery seed. turned out awesome, with relatively low calories. got chowed down at a bbq, many came back for seconds. p.s. i hate potato salad, and loved this one!!!
