Peach Mug Pie

Ingredients

  1. 2 tablespoons water
  2. 1 tablespoon cornstarch
  3. 1 (15-ounce) can peach halves, juice reserved and peaches chopped
  4. 1/4 cup brown sugar
  5. 1 pinch salt
  6. 1 cup heavy cream
  7. 3 tablespoons confectioners’ sugar
  8. 4 graham crackers, crumbled
  9. 1 pint vanilla ice cream, softened

Instructions

  1. In a small bowl whisk together 2 tablespoons water with the cornstarch. In a small pot over medium heat reserved peach juice, cornstarch mixture, brown sugar and salt. Once the sauce thickens, about 5 minutes, stir in the chopped peaches.
  2. In a chilled mixing bowl whip heavy cream with confectioners’ sugar until soft peaks form. Use 1 cup for mug pies, and reserve the rest for the Caramel Cocktail recipe.
  3. Begin assembling peach pies by in clear glass mugs. Place a layer of graham crackers at the bottom, then a big spoonful of the peach pie filling. Sprinkle with another layer of graham crackers. Top with a scoop of vanilla ice cream, then another layer of graham crackers followed by a dollop of whipped cream.

Mmmmmmmmmmm…..Delicious! What a wonderful way to end the evening. This dessert is so comforting. I added a few spices to the peaches because I love them. My kids keep raving about how this dessert is fabulous. So quick and easy, which is why I made it! Was having a lazy day today. Thank you Sandra!

I made his for my husband’s birthday. We loved it! The only thing I would do differently is just use bottled whipped cream. It’s one less step and the heavy cream and confectioner’s sugar are items most people wouldn’t have on hand…but who doesn’t have a bottle of whipped cream in their fridge, right?

I have the pickiest husband and he loved this! Instead of making my own whip topping, I just used cool whip … I’m sure I missed out on the goodness of homemade whip but it was great for a quick light dessert! I also (unfortunately) skipped the ice cream but it was still really good.
