Ingredients

  1. 2 chickens (3 pounds each), cut in 8 serving pieces
  2. 1 quart buttermilk
  3. 2 cups all-purpose flour
  4. 1 tablespoon kosher salt
  5. 1 tablespoon freshly ground black pepper
  6. Vegetable oil or vegetable shortening

Instructions

  1. Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  2. Preheat the oven to 350 degrees F.
  3. Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
  4. Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don’t crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

I do not like this recipe. I oven fry my chicken very differently. I use olive oil and turn my oven to 450 or 475 degrees.
I learned how to bake chicken from Ina. That turned out great. But not this….

If you want oven cooked fried chicken, check out the one Oprah uses. I’ll try this recipe but use my copy cat concoction of The Colonel’s 11 herbs and spices. I even use it on boneless skinless breast and fry then bake at 320 degrees until 165 degrees internal temperature. But I would use Inas recipe as my North Star to guide me.

Its good. Its greasy. Its fried. May I suggest an alternate title, such as Fried/Oven Chicken? I assumed it was cooked in the oven until I read the recipe. I liked the result. Tasts like chicken 😉

Delicious! Easy the key is having a high-temperature oil (like a peanut oil.) Will add more spices next time as my family prefers it. However, this really helped with a crispier fried chicken. This is a great starting point.

Ina’s basic recipe for fried chicken finished in the oven is very good, albeit short on spice.   Since I prefer spicier fried chicken, I start by seasoning the dried chicken with a mixture of garlic powder and cayenne.  I add Frank’s Hot Sauce to the buttermilk marinade.  After removing the pieces from the marinade, I once again sprinkle them with a spice mixture first.  I use both hot and sweet paprika, garlic powder, cayenne, salt and black pepper.  At this point I dredge in flour.  I like to split the flour between two large Ziploc bags, shaking one piece at a time in each bag bag. Flour gets funky after four pieces, so this seems to help. I follow her frying and baking instructions, using either canola oil or peanut oil rather than vegetable oil.   It is a once or twice year treat at our home.

While this is a good recipe, it’s not oven fried. I used to do pan fried chicken and pork chops this way. They’re fried and cooked through in the oven. Wish Ina would develop a real oven fried recipe, I’m sure it would be delicious.

First and foremost what do you think oven fried means? It’s fried first then finished in the oven therefore it’s oven fried and if you always add some of your own ingredients such as spices it’s always going to turn out good. Don’t put down the chef just because it wasn’t to your liking tweak it and put in the review of what you did never put down the chef that’s just Rude.

This is fried chicken, not oven-fried chicken. The part where you stick the half done fried chicken pieces in an oven does not make it an oven fried chicken recipe. It may be delicious but it’s not overnight baked.
