Ingredients

  1. 1 tomato, chopped
  2. 1/2 onion, diced
  3. 2 bell peppers, diced into 1/4-inch pieces
  4. 6 slices bacon, fried and crumbled
  5. 4 sausage patties, fried and cubed
  6. 1 slice ham, cubed
  7. 10 ounces Picante sauce
  8. 8 eggs
  9. Shredded cheese, for garnish

Instructions

  1. Mix first seven ingredients into a large bowl.
  2. Beat eggs. Place oiled omelet pan on low heat. Pour egg mixture into omelet pan. Spoon vegetable ? meat mixture onto the eggs and cook until omelet is set. Sprinkle with shredded cheese of your choice, and serve.
