Yield: 8 servings

Ingredients

  1. 2 cups cold heavy cream
  2. 12 ounces Italian mascarpone cheese
  3. 1/2 cup sugar
  4. 1/4 cup Kahlua liqueur
  5. 2 tablespoons unsweetened cocoa powder, such as Pernigotti
  6. 1 teaspoon instant espresso powder
  7. 1 teaspoon pure vanilla extract
  8. 3 (8-ounce) packages Tate’s Bake Shop chocolate chip cookies
  9. Shaved semisweet chocolate, for garnish

Instructions

  1. In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, Kahlua, cocoa powder, espresso powder and vanilla. Mix on low speed to combine and then slowly raise the speed until it forms firm peaks.
  2. To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap and refrigerate overnight.
  3. Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut into wedges and serve cold.

I prepared the recipe as indicated in the instructions but the mixture of heavy cream, mascarpone, sugar, Kahlua powder, cocoa powder, espresso and vanilla went bad. Any ideas of what could have gone wrong? I put everything in the electric mixer.

OMG, this is my favorite thing to make and take to a dinner party. Everyone loves it! I could just eat the cream in a bowl but I behave for company lol.

Can I substitute with non alcohol liqueur so kids can enjoy?

This is perfect, it’s easy, can be frozen, and tastes the best.  I’ve made it 3 or 4 times and it’s always a big hit!

Very good. Everyone that’s had some said it was very good. I used cream cheese and chips ahoy cookies.
