Meatloaf for a Large Family Gathering

Ingredients

  1. 1/2 cup finely chopped onions
  2. 1/2 teaspoon salt
  3. 1/4 cup finely chopped red pepper
  4. 1 1/2 cups bread crumbs
  5. 2/3 cups cream
  6. 2 eggs (beaten)
  7. 1 1/4 pounds ground beef
  8. 3/4 pounds Italian sausage, casings removed
  9. 1/2 teaspoon dried sage
  10. 1/2 teaspoon dried thyme
  11. 1/2 teaspoon black pepper
  12. Mustard Glaze, recipe follows
  13. 1/2 cup mustard
  14. 1 tablespoon brown sugar
  15. 1/4 teaspoon cider vinegar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Combine all ingredients in large mixing bowl and mix for about ten minutes. Place meatloaf into loaf pan and cover with Mustard Glaze. Cook for 1 1/2 hours.
  2. In a small bowl, mix all the ingredients together.

This is a great recipe. I also added a tbsp of Better than Bullion Beef to a 1/4 cup of warm water when I mixed everything up. I then left it in the bowl in the fridge for a couple of hours to get “happy”. I can’t wait for the leftovers tomorrow.

My family can’t get enough of this meatloaf. I love the mustard glaze on top instead of standard ketchup. I also make it a little healthier by substituting italian turkey sausage and low fat milk (you can even use 1/2 & 1/2 if you want to go a little better), and it still turns out amazing. It is always moist and full of flavor. I think the key is finding a really flavorful turkey sausage.

I needed a recipe for meatloaf that would feed a large crowd at my Bible Study & this one sounded interesting. I did add some finely chopped celery and carrots & doubled the recipe. It was fantastic. Everyone raved and I ended up giving the recipe to about 10 of the women. It’s a keeper.

I expected more from this recipe than I got. The texture was fine, but it was kind of bland. I have been using a recipe from the old ‘365 ways to cook hamburger’ for at least 25 years. Over the years I have made enough changes to make it my own. It includes horseradish, which I feel really perks it up.

This meatloaf is actually pretty good. It’s the most moist meatloaf I’ve ever had… I use the mustard glaze the first time and didn’t like it as much.. The second time around I made it for a quick meal and used ketsup instead and it was delicious!!!!
