Made with just sugar, water and dried lavender buds, this easy lavender syrup adds floral flavor to drinks and desserts and will fill your kitchen with South-of-France fragrance. Ingredients

  1. 2 cups water
  2. 1 cup sugar
  3. 1 tablespoon dried lavender buds

Instructions

  1. Place the water, sugar, and lavender in a saucepan and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain and cool. Cover and refrigerate for up to a week.

One drop each of red and blue food coloring would make it lavender in color. As far as the recipe goes, it’s perfect. If you’re looking for a shortcut, like I usually am, put the lavender in a tea steeping ball (is there a proper name for those things? before adding it to the saucepan. Then it won’t have to be strained later, which could avoid a mess if your saucepan doesn’t have a pouring lip on the side.

As far as the “syrup” portion of the recipe title, I would give it five stars . . . but as far as the lavender portion, it is a big zero. I was making this as it is an ingredient listed in a lavender margarita recipe (see the Cooking Channel website. The picture for that recipe was a drink with a lovely but faint (surprise clear lavender color. So naturally I expected to get that from lavender simple syrup. Boy was I wrong!! I followed the directions exactly. While the taste was fine, the syrup had a slightly BEIGE tint. If anyone figures out how to make this syrup lavender, I would love it if you would post your suggestions. Otherwise, no way will I be making this again!!!
