Key Lime Pie

Ingredients

  1. 1 1/2 cups graham cracker crumbs
  2. 1/2 cup granulated sugar
  3. 4 tablespoons (1/2 stick butter) melted
  4. 2 (14-ounce) cans sweetened condensed milk
  5. 1 cup key lime or regular lime juice
  6. 2 whole large eggs
  7. 1 cup sour cream
  8. 2 tablespoons powdered sugar
  9. 1 tablespoon lime zest

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling.
  3. Lower the oven temperature to 325 degrees F.
  4. In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.
  5. Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. Sprinkle the lime zest as a garnish on top of the sour cream and serve chilled.

I have made this recipe several times. I only gave it a 4 because the cooking time for the pie crust is way off . 20 minutes to bake the crust is WAY too long! Now, after I mix the ingredients for the crust and press the mixture into the pie plate, I refrigerate the crust for at least 40 mns. I then bake it for 6-8 mns . This pie recipe is always a hit!

Not sure why they changed the name and took Emeril off of this. This is the BEST key lime pie ever!!

CHANGE:
* crust bake time to 8-10min. 20 is WAY too long
* bake pie for 30min in cooled shell
* not sure if living in mn changes the bake times but I have made this many times, it always turns out, and EVERYONE ravs!

This is wonderful  pie! We used passionfruit juice instead of key limes and it is just as good! I am 10 (almost 11) it is so simple that even I could make it BY MYSELF!! I bet it would be just as good with key limes. This pie is the best pie I have had! I would recommend you try it it with passionfruit juice!

I love this pie. It is from Emeril Lagasse and very simple but flavorful. Really like the sour cream on top, nice flavor with the key lime. Highly recommend it. I use a large pre-made graham cracker crust , the one that says 2 extra servings and perfect size. Again, highly recommend.

This is the BEST! I have learned that using off brand sweetened condensed milk makes it too sweet. Use Borden’s Brand for the best outcome. It never goes to waste in my house!
