Ingredients
- Raspberry Syrup, recipe follows
- Chocolate Syrup, recipe follows
- Pure vanilla extract
- Heavy cream, chilled
- Club soda or seltzer, chilled
- Vanilla ice cream
- Strawberry ice cream
- Chocolate ice cream
- Coffee ice cream
- 3/4 cup cocoa powder, sieved
- Pinch kosher salt
- 1 1/2 cups sugar
- 1/2 teaspoon instant coffee granules
- 1 teaspoon vanilla extract
- 1 pint fresh raspberries, sliced in 1/2
- 1/2 cup sugar
- Juice of 1 lemon
Instructions
- Pour 3 tablespoons of Raspberry or Chocolate Syrup or 1 teaspoon vanilla plus 3 tablespoons heavy cream in a tall ice cream soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a straw.
- Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
- Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.

Have not tried; but they sound delicious. I would appreciate seeing the nutritional info. I’m on WW and have to count every little thing; and it’s so much easier when that info is available for a recipe. I’m rating on what I think it’d be. Who doesn’t like an ice cream soda? Right?

Tasty. Not too sweet. I chose to make the raspberry sauce. I did feel guilty throwing away the raspberry “mush” after straining it to make the sauce. Maybe I could have used the remaining raspberry for something else, but overall, this recipe was fun and delicious. I would make it again.
why not used ground coffee coffee beans, I usually find instant coffee has an off-taste usually not very pleasnt. It is easy to finely grind your favoriite fresh coffee beans such as french roast or esspresso , something with a strong rich flavor and aroma
I did not care for the ice cream soda, it was just OK, but the recipe for the chocolate syrup is awesome! (I did not make the Raspberry Syrup.)

The only part of the recipe I made was the chocolate syrup; which was to die for. I used it in an iced coffee I made. The syrup had a nice rich flavor with the coffee granules. I used instant espresso granules.
I made the chocolate sodas and they were enjoyed by all. A very enjoyable and easy to make treat on a hot summer day!
