Hot Apple Cider Toddy

Ingredients

  1. 3 cups apple cider
  2. 1 stick (8 tablespoons) butter, softened
  3. 1/4 cup light brown sugar, packed
  4. 1 teaspoon ground nutmeg
  5. 1 teaspoon ground cinnamon
  6. 1 teaspoon ground cloves
  7. 8 graham crackers
  8. 1 teaspoon pumpkin pie spice
  9. 2 teaspoons rum extract
  10. 2 cups non-dairy whipped topping
  11. 4 whole cinnamon sticks
  12. 4 shots bourbon whiskey

Instructions

  1. Heat the apple cider in a non-reactive saucepan.
  2. In a bowl, combine the softened butter, brown sugar, ground nutmeg, cinnamon, and ground cloves. Whip until the butter becomes creamy and the ingredients are incorporated. Place the graham crackers and pumpkin pie spice in a plastic baggie and crush with a rolling pin. Combine the rum extract with the non-dairy whipped topping. In a footed coffee glass, place a single cinnamon stick and a slice of spiced butter. Pour 1 shot whiskey into the glass. Ladle the hot cider to fill the glass. Garnish with a dollop of rum-flavored topping and a sprinkle of graham cracker crumb mixture. Serve warm.

I’m wondering if so many of you prepared this correctly. I myself did reduce the amount of clove to a 1/4, however, this was a huge hit at my Thanksgiving. I found it quick and easy to prepare considering not making it before. It was a sweet, rich, and delicious addition to our meal!

I made this recipe twice during the Thanksgiving weekend. People said it was the best hot apple cider they had every had. I didn’t include the alcohol. The spiced graham cracker crumbs are so good on top. The spiced butter add such a rich flavor. I will definitely make this again for Christmas.

I didn’t use the graham crackers but I did sprinkle the whipped topping with the pumpkin pie spice. I also didn’t use the rum extract. I didn’t see this as a greasy drink at all like many others have, but I served it coffee cups so maybe I just couldn’t see it. It was hot and delicious! My friend said it was one of the best drinks she had ever had and insisted on getting the recipe!

Sandra Lee is so beautiful and great to watch for ideas, but all her recipes are terrible. This one in particular, I made for my Christmas party without testing ahead of time. I was so embarassed to have served such a horrible drink. I love short cuts but hers are not that delicious. She is beautiful and a great actress, love her show but not the recipes.

The non-dairy whipped topping melts into oil slicks on these and the graham crumbs turn to sludge. Nobody is impressed by sludge.
