Ingredients

  1. 4 cups old-fashioned rolled oats
  2. 2 cups sweetened shredded coconut
  3. 2 cups sliced almonds
  4. 3/4 cup vegetable oil
  5. 1/2 cup good honey
  6. 1 1/2 cups small diced dried apricots
  7. 1 cup small diced dried figs
  8. 1 cup dried cherries
  9. 1 cup dried cranberries
  10. 1 cup roasted, unsalted cashews

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
  3. Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

Yes. I have been making this from Ina’s 2008 Back to Basics recipe I saw on Tv. Looks like it has reduced sugar (formerly 1/2 brown sugar cooked over heat w/ Sugar, vanilla, salt, and butter).and added cashews. Use what you have for nuts, use or omit coconut, use or omit fruit… very flexible. Per this recipe, after browning oats, cook final mix at 300 for 25 min. Always enjoyed!

It has flavor, the recipe says 45 minutes, it’s not enough time, I baked an hour and it came out brown.

350 for an hour definitely leaves a burnt mess. Next time 300 deg and stir every 10 min.

Recipe is great but I recommend cold pressed coconut oil over vegetable oil.

Ina’s recipes have never let me down. I’ve made this recipe countless times. It’s a go-to for group events—this plus yogurt and fresh fruit—and an invitation for teens/young adults to make their own yogurt parfaits—it’s only brought rave reviews. I do cheat and substitute half of the oil with melted butter and add a scant 1/2 cup light brown sugar. Please don’t judge me too harshly, friends.

I made it using the suggestion to reduce the oil to 1/2C and temp to 300. I used avocado oil, chopped almonds, and maple syrup. I baked it almost an hour, stirring it every 10 minutes. It is nice and crispy with a hint of sweet. I think it’s a winner.

My first attempt at this recipe also was a near flop – granola too greasy, too dark, borderline burnt. I just made a fabulous batch so here’s my recommendations: temperature 300, 45 minutes – but keep an eye on and stir every 15 minutes or so. Also reduce oil to 1/2 cup – I used good olive oil and added about a teaspoon of kosher salt – Zee Best!
