Grilled Peach Cobbler

Ingredients

  1. 6 ripe peaches, halved, pit removed
  2. 1 stick (8 tablespoons) unsalted cold butter, melted, plus more if needed, divided
  3. 8 tablespoons light brown sugar, divided
  4. 1 teaspoon ground cinnamon, divided
  5. 1/2 cup granola
  6. 1 pint vanilla ice cream
  7. 1/2 cup prepared caramel sauce, heated

Instructions

  1. Heat the grill to medium.
  2. Place the peaches cut side down on the grill until browned. Remove from the grill, cut into wedges and place into a gratin dish. To the peaches add half the butter, half the brown sugar and half the cinnamon, and toss. Add the remaining butter, sugar and cinnamon to the granola in a small bowl and toss until combined, adding more butter if needed. Top the peaches with the granola mixture and place the gratin dish onto the grill. Close and bake until the peaches and granola are golden brown, about 15 minutes.
  3. Place 1 large scoop of ice cream into 4 bowls and top with the peache mixture. Drizzle with some of the caramel sauce.

My husband followed this recipe, but he forgot to drizzle the cobbler with caramel
sauce at the end. I felt like the cobbler didn’t need it. The butter and brown sugar
provided enough caramel taste and sweetness to the cobbler.

I followed another recipe to prepare the stone fruit (I used peaches, plums and nectarines)–marinated it 15 min in mix of brown sug., little rum, little orange liqueur, cinnamon and vanilla. Watch the fruit on the grill carefully-doesn’t take long. Made mine in 8×8 alum foil pan–no clean up! Topping didn’t crisp a lot, but did crisp enough. I cut WAY back on sugar and butter–used crushed Kashi Go Lean cereal instead of granola. I had to stop myself from eating the whole pan it was so good!
