Grilled Monterey Sardines

Ingredients

  1. 5 ounces fresh sardines
  2. 1-ounce lemon juice
  3. 2 garlic cloves, chopped
  4. 1/2 cup olive oil
  5. 1/3 cup water
  6. 1/2 teaspoon salt
  7. 2 ripe tomatoes, chopped
  8. 3 green onions, chopped
  9. 4 cloves garlic, chopped
  10. 1/4 cup chopped basil leaves
  11. 1/2 cup chopped red onions
  12. 1/3 cup chopped parsley
  13. 1/4 cup olive oil
  14. 3 tablespoon crushed red pepper
  15. 1/4 teaspoon salt
  16. 1/4 teaspoon black pepper
  17. Angel hair pasta and/or antipasto salad, or serving, optional

Instructions

  1. Whisk together all marinade ingredients and marinate the sardines for 2 hours
  2. For the Salsa: Mix all the ingredients in a large bowl.
  3. Preheat grill to medium heat. Lightly oil the grill. Place the sardines on the preheated grill and discard marinade. Cook sardines for 5 to 7 minutes (depending on size) or until they flake easily with a fork. Serve with angel hair pasta, and/or antipasto salad, if desired.
