Ingredients

  1. 5 large red potatoes, peeled and cubed
  2. 2 ribs celery, chopped
  3. 1/2 large onion, chopped
  4. 3 hard-boiled eggs, 2 chopped and 1 sliced
  5. 2 heaping tablespoons sweet pickle relish, drained
  6. 1/2 cup salad dressing, (recommended: Miracle Whip)
  7. 3 tablespoons yellow mustard
  8. 1 tablespoon sugar
  9. Paprika, for garnish
  10. Salt

Instructions

  1. Boil cubed potatoes until they are tender. Drain and cool. In a large bowl add celery, onion, 2 eggs and pickled relish. Add the salad dressing, yellow mustard and sugar. Stir well. Place the sliced egg on top of potatoes and sprinkle with paprika and salt. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight.

OMG!! Just found this recipe and I love that they used Miracle Whip! I grew up on it, it’s the only thing my mother bought. But later in life she switched to to Hellman’s and it’s just so eggy I don’t prefer it but will eat it. I’ve found if we don’t use Miracle Whip I’ll use Duke’s or Blue Plate Mayo because they’re not as eggy as Hellman’s. LOVE LOVE LOVE!!!

I’ve made it exactly as stated and it’s flavorful depending on the taste you are looking for. People are quite different on what makes a good potato salad. I personally needed a punch of mayonnaise. I used a 5lb bag red potatoes and added 1/2 cup extra of miracle whip plus 1/2 cup of Mayo and it turned out perfect for my family.

Next time I would be more careful to balance the mustard and salad dressing. It came out very yellow. Has the taste my hubby was looking for though
