Ingredients
- 5 bundles collard greens
- 3 cups salted water
- 3 large smoked ham hocks
- 1 cup sugar
- 1/2 cup salt
- 3 tablespoons crushed red pepper flakes
Instructions
- Thoroughly wash collard greens, be sure to pull leaves apart and remove any sand. In a medium saucepan, bring 3 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover. Cook ham hocks until slightly tender and remove from pan. In the same saucepan, add collard greens and remaining ingredients. Cover and cook greens for 2 1/2 to 3 hours until water reduces, add more water and additional salt and sugar, to taste.

Everyone southerner knows that when you are trying something new, go with your taste and taste the recipe throughout. Throughout my life in Southern Louisiana, I just seasoned until my ancestors whispered “that’s enough chile.” Gina provided and excellent base recipe for beginners and you have to adjust and gear the additives to your taste. It’s not hard. This recipe is a winner every time. My changes are small, but that’s to cater to my taste. Find your tastes and make it your own. I’ve made this many times and everyone loves it.
Excellent recipe, minus the sugar. I also changed the hamhocks out for smoked turkey leg/wing. Simple and easy, a bit spicy and super savory! Love it.
Delish..i loved these greens! My daughter and i ate every bit, and we still wanted more! The only thing i did different was substitute bacon for ham hock and seasoned it to my liking with the salt,sugar and hot pepper flakes!! I picked up some ham hocks and will be making them again tomorrow!! Gina girl, you rock!!!!

“Fire in the Hole” and a lot simpler way to cook greens. Back off the Red Pepper Flakes and season to your desired tastes. Love them
All the ingredients are right on time but WAY too much sugar and Salt, Use salt and Sugar to taste and add a little Vinegar and they are perfect !!!

I normally cook my greens similar to the way Gina cooks hers. Except hers had too much salt and too many pepper flakes. I normally do use the ham hocks, but I use a lttle salt, and a hot pepper from the garden. Just cut the hot pepper in half and throw it in the dish while it is cooking. When done if you can find it take it out and throw it away. Pepper hot taste but not too hot.
We were looking so forward to trying “This” recipe, but wow it was so salty!
Is there a error or miss-print in the amount of salt needed? I even remove most
of the liquid 1/2 hr. after adding the collards and added more fresh water. It
was still grossly salty. Next I rinsed “my” portion under fresh hot running water
but they were still way to salty. Unfortunately I had to waste the food.
