Funky Fried Chicken

Ingredients

  1. Canola oil, for frying
  2. 2 tablespoons granulated garlic
  3. 2 tablespoons granulated onion
  4. 2 tablespoons kosher salt, plus additional for seasoning
  5. 2 tablespoons freshly ground black pepper
  6. 1 tablespoon cayenne
  7. 1 tablespoon paprika
  8. 2 (3 1/2-pound) whole chickens, cut into 10 pieces each and trimmed of fat
  9. 4 cups all-purpose flour

Instructions

  1. In a large skillet, add canola oil over medium heat.
  2. In a small bowl, mix together all spices. Use 1/2 of mix to season chicken. Let seasoned chicken sit at room temperature for 15 minutes.
  3. In a large bowl, add flour and remaining seasoning mix. Toss chicken with seasoned flour and add to hot oil, 1 piece at a time. Cover pan with foil. Remove foil after 8 to 10 minutes and flip chicken. Cook until the chicken is golden brown. Remove from fryer to a paper towel-lined sheet tray. Season with salt, if desired, and serve.

This chicken is great! The whole family loves it! I always make a point to watch the video when they’re available so that I can see exactly what the chef/cook does. Well, I’m glad I watched this one cuz what a lot of people probably didn’t realize and I’m not sure why it was changed, is that the seasonings are totally different, as far as the measurements go. There is a lot more seasoning in the recipe on the video when he makes it than is listed and I think that’s the problem. Watch the video and write down the amounts he uses and put it in your apps note section on the recipe so you have the proper seasoning. It makes all the difference!
