Ingredients
- 1 cup half-and-half
- 3 large eggs
- 2 tablespoons honey, warmed in microwave for 20 seconds
- 1/4 teaspoon salt
- 8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
- 4 tablespoons butter
Instructions
- In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
- Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
- Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

This was easy and delicious. I made it for a graduation brunch and it got lots of compliments. I had veggies leftover from the nacho bar at the grad party, so threw those and some shredded cheese in. I will make this again.
I have been making this for years and it NEVER GETS OLD. This has easily become a weekend favorite as well as a Christmas morning tradition for my whole extended family. IF we’re lucky that there’s leftovers then i serve it that night with ice cream and fruit compote with whipped cream on top. The kids love it!!!
This has become my go to for French toast. Why? It’s easy and always has consistently good results with a minimal number of ingredients. I don’t need to change a thing.
I love this recipe!
I’ve been making this recipe for years. It’s my go to & by far the best French toast I’ve had. Simple yet delicious. I add a little cinnamon-my only variation & I use half & half if I don’t have milk.
Wondering if Alton Brown has converted this recipe into a French toast casserole for a group?
The best French toast I’ve ever had, and I’ve tried many recipes.
My single modification is to sprinkle cinnamon-sugar on the bread after its been dipped in the custard.
Had only fat free half and half….was still yummy. Great technique!
