Fluffy Buttermilk Mashed Potatoes

Ingredients

  1. 1 1/4 pounds white boiling potatoes, peeled and sliced
  2. 1 teaspoon salt
  3. 3/4 cup warm buttermilk
  4. 1/2 teaspoon baking soda
  5. 2 teaspoons unsalted butter
  6. Freshly ground black pepper

Instructions

  1. Place the potatoes and salt in a medium saucepan and add enough water to cover. Bring to a boil over high heat. Reduce the heat and simmer until the potatoes are pierced easily with a fork, about 10 minutes. Drain, reserving a few tablespoons of the cooking liquid.
  2. Place the potatoes in a large bowl and partially mash.
  3. Add the warm buttermilk and baking soda, mix well, and mash completely. Stir in the butter and pepper and adjust the seasoning as needed. If you like your mashed potatoes creamy, add the reserved cooking liquid. Serve immediately.

These weren’t terribly flavorful, in my opinion. Maybe it was the potatoes, and not the recipe. I couldn’t really tell that there was buttermilk in here, which I thought was strange.

Again, it might have been the potatoes.

This is a very easy and delicious recipe for an everyday food. These potatoes were very light and fluffy and had a wonderfull flavor. We will be keeping this recipe handy and look forward to adding little extras to it.
