Date-Orange Muffins

Ingredients

  1. 1 whole orange (well washed)
  2. 1/2 cup orange juice
  3. 1 egg
  4. 1/2 cup butter
  5. 1 1/2 cups flour
  6. 1 teaspoon baking soda
  7. 1 teaspoon baking powder
  8. 3/4 cup honey or white sugar
  9. 1 teaspoon salt
  10. 1/2 cup chopped dates

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cut orange in pieces and remove pits. In food processor, put in first 4 ingredients. Blend for 3 to 4 minutes. Sift dry ingredients into a bowl. Mix in chopped dates. Blend again until mixed. Spoon into greased muffin pans. Bake at 400 degrees F for 15 minutes. (If using honey, add with first 4 ingredients, if using sugar, add to dry mix.)

These are very moist. I made a few edits based on what I had on hand, and to reduce the fat. I substituted applesauce for half of the butter. I only had half the amount of dates, so I also added coconut. I added the sugar to the Orange in the food processor versus to the dry ingredients. .

Followed the recipe exactly. Just ok. Did not get much of an orange flavor at all. Could have used a few more dates. Make sure your orange juice is warm, otherwise cold juice will chill your butter and make it clump. Also, roll your chopped dares in a tablespoon of flour to help keep them from sticking together.  From now on I will only used recipes that food network has tested and vetted. 🙁

Very good and EASY recipe to follow! Used room temperature unsalted butter, honey instead of sugar, 4 teaspoons orange pulp, no dates and 3/4 cup of chopped pecans. Orange didn’t have to be cut in pieces if it was placed in food processor with other wet ingredients.

Cooking time is closer to 18-19 minutes. But I enjoyed mine warm from the oven!! Will share with others (if they last that long!

I made these muffins yesterday and they are awesome! I made 2 changes: 1) I didn’t have any orange juice in the house so I substituted a 1/2 c. of milk. 2) I used 1 c. of dates instead of 1/2 a cup. I love dates and I could see I would need more. I had one for breakfast this morning and it’s still moist and fresh! Yum!!! Signed, a fellow Canuck (Vancouver – the other centre of the universe 😉 )

My Husband and I made these tonight and they are so good! They were easy to make, and we almost didn’t bake them because the batter was so yummy.
We used the honey instead of sugar, no dates, some walnuts and 4 teaspoons of orange pulp. The muffins turned out Incredible!
We recommend this recipe to everyone.

It had a bitter flavor because you cut up the orange without peeling it. I like the orangey taste but there was that bitter aftertaste, which is why my kid didn’t eat it. I cooked them the 15 minutes and they were a little undone in the middle.
I didn’t think the instructions were very clear either. I wasn’t sure if the butter was supposed to be at room temperature or what.
I think these would be good if you peeled the orange and then used the zest and the orange separately.
