Creole Marinated Grilled Red Snapper

Ingredients

  1. 2 onions, sliced
  2. 4 cloves garlic, minced
  3. 1 tablespoon tomato paste
  4. 2 tablespoons olive oil
  5. 1 teaspoon hot pepper sauce
  6. 1 teaspoon Worcestershire sauce
  7. 1/2 teaspoon fresh chopped thyme
  8. 1/2 teaspoon chili powder
  9. 1 teaspoon sugar
  10. Salt and pepper
  11. 1 whole cleaned red snapper

Instructions

  1. Combine the onions and garlic. Whisk together the remaining ingredients and pour 1/2 marinade over fish with onions and garlic. Let fish marinate in the refrigerator for at least 4 hours. Grill fish on both sides for about 7 minutes. Warm remaining marinade and serve over cooked fish.

Simple recipe that delivers flavor.   Very minor changes — for the two of us used about 1 pound red snapper fillets.  Made all the marinade, brush half onto both sides of fillets, set in refrigerator for about 1 1/2 hours, then brought out to room temp.  Instead of grilling I sauteed fillets on stove top.   I sauteed red onions, then mixed in remaining marinade and served mixture on top of fillets.  Outstanding flavors. We loved it. Definitely a keeper.

From this hodge-podge collection of spices comes a perfectly balanced marinade/rub of sweet, spicy and tangy. It was easy since these are all staples in my pantry, so there wasn’t any last minute things to get from the store. The result was delicious! I agree with grilling the onions and garlic as a topper.
