Ingredients

  1. 3 strips bacon, diced
  2. 1 medium onion, sliced
  3. 2 bunches collard greens, washed
  4. 1 tablespoon chopped garlic
  5. 1/2 teaspoon red pepper flakes
  6. 1 tablespoon brown sugar
  7. 2 tablespoons cider vinegar
  8. Salt and freshly ground black pepper

Instructions

  1. In a high-sided skillet, cook the bacon over medium heat until brown, about 5 minutes. In the same pan add the onions and saute until translucent, about 5 minutes.
  2. Strip the leaves from the tough stems of the collard greens. Stack the leaves, roll them up and cut them into thin strips.
  3. To the skillet with the bacon and onions, add the garlic and red pepper flakes, brown sugar, cider vinegar, salt and pepper, to taste. Add the greens, stir and cover the skillet. Cook for 15 minutes, stirring halfway though. Collards are done when tender and no longer bitter. Remove from heat to a serving bowl. Serve the greens with the Light and Crispy Fried Chicken, if desired.

Dear Sandra Lee: please visit the south and actually try collard greens. To cook them for 15 minutes is ineffective. They need to cook 2 hours at least to be tender.

I made this recipe tonight. I feel like traditional collards are cooked much, much longer. I prefer this recipe because you do not cook the life and nutrients out of the greens. It is so flavorful! I actually added 1 Cup of diced ham on top of the 3 strips of bacon because we had so much leftover ham from a late Christmas dinner! AMAZING! Saving this recipe in the family cookbook.

This was the perfect collards recipe, flavorful, easy and not difficult to make.  I liked it much better than recipes that have you braise it forever.  The shredded collards were tender, and even worked for my husband who doesn’t normally like them.  We added even more bacon.   Yum!
