Candied Sweet Potatoes

Ingredients

  1. 3 pounds sweet potatoes
  2. 6 tablespoons butter
  3. 1 1/2 cups sugar
  4. 1 teaspoon cinnamon
  5. 1 teaspoon nutmeg
  6. 2 teaspoons vanilla extract
  7. 1/4 teaspoon almond extract
  8. 1/4 teaspoon salt
  9. 1/4 cup peach liqueur, like Schnapps
  10. 1 teaspoon lemon zest
  11. 1 teaspoon orange zest
  12. 1 cup orange juice
  13. 1 lemon, juiced
  14. 1/2 orange, sliced

Instructions

  1. Peel and slice sweet potatoes. Put in a large pot of lightly salted water. Bring to a boil. Boil 5 minutes, drain and cool. Put sweet potatoes into a 2 quart casserole, dot with the butter. Mix sugar with next 8 ingredients and mix well. Sprinkle over sweet potatoes. Pour orange juice and lemon juice over sweet potatoes. Cover with the sliced oranges. Bake in a preheated 350-degree oven for 45 minutes to 1 hour.

My family absolutely loves these sweet potatoes! I’ve been making them for years! Someone just requested the recipe today! My only tweak is that I cut down the sugar to about a cup. Yum!

I hate to be negative & I know from reading the reviews that some people had wonderful results with this recipe. I absolutely did not. I followed the directions carefully and it turned out completely soupy and just awful. If you want to try this recipe I would just caution you to have a “plan B” in case it doesn’t turn out correctly. On the bright side, the peach schnapps made a delightful after dinner drink.
