Ingredients
- 1/2 cup whole raw almonds
- 1/2 cup pecan halves
- 1/2 cup walnut halves
- 1/4 cup unsalted shelled sunflower seeds
- 1/4 cup unsalted shelled pumpkin seeds
- 2 tablespoons canola oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 2 pinches cayenne pepper
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, combine all the ingredients and toss well to coat.
- Spread the nuts in a single layer on a baking sheet and bake, shaking them every few minutes, until toasted and fragrant, about 15 minutes. Let the nuts cool and store in an airtight container.

Nothing cajun about this recipe. This was bad.
This was a great recipe – it ran out fast in my house. Next time I make it, I would double it because it goes so fast and keeps well. I would use less oil next time as well, just a bit too greasy. Everyone loved the taste. I normally make trail mix with nut, raisins and craisins. This was definitely a good change – spicy, but not too spicy!
The mix was good but needed more spice. A little less oil may also work well.
I twice doubled this recipe. It is very tasty. I’m not so sure I’d add as much oil next time.
