Braised Hoisin Beer Short Ribs with Creamy Mashed Yukons and Sesame Snow Peas

Ingredients

  1. 3 pounds beef short ribs, about 10 ribs
  2. Salt and freshly ground pepper
  3. 3 tablespoons vegetable oil
  4. 10 to 12 garlic cloves smashed
  5. 1-inch piece ginger, peeled and sliced into 1/4-inch slices
  6. 12 ounces good ale (recommended: Bass)
  7. 3 tablespoons rice wine vinegar
  8. 1 cup hoisin sauce
  9. Creamy Mashed Yukons, recipe follows
  10. Sesame Snow Peas, recipe follows
  11. 3 pounds Yukon gold potatoes, peeled
  12. 1/2 stick butter, melted
  13. 1 cup half-and-half
  14. Salt and pepper
  15. 1 bunch chives, chopped
  16. 1 pound snow peas
  17. 2 tablespoons vegetable oil
  18. 1 tablespoon dark sesame oil
  19. 1 teaspoon sesame seeds
  20. Salt and pepper

Instructions

  1. Season the ribs generously with salt and pepper. Heat the vegetable oil in a large heavy pot with a lid (Dutch oven) over high heat. Brown the ribs on all sides, in batches if necessary. Remove the ribs and pour off all but a couple tablespoons of the rendered fat.
  2. Return the pot to the stove, lower the heat to medium and saute the garlic and ginger for about 3 minutes. Add the ribs back to the pot. Add the beer and the vinegar. Stir and then cover and simmer for 2 1/2 hours.
  3. Preheat the oven to 300 degrees F.
  4. Pour the hoisin sauce over the ribs, move the pot to the oven, and cook, uncovered, for 30 minutes.
  5. Remove ribs and ginger from sauce. Strain fat from the top of the pot so that you’re left with just the good stuff. Serve with Creamy Mashed Yukons and Sesame Snow Peas.
  6. Boil potatoes until fork tender. Heat the butter and half-and-half over medium heat until hot, but not boiling. Drain the potatoes, return them to the pot and mash with a hand masher. Add hot liquid to potatoes and whip with an electric hand mixer until smooth. Season, to taste, with salt and pepper. Add chives and mix before serving.
  7. Rinse the peas and trim off the ends. In a large saucepan over medium-high heat, add the oils and heat. Add snow peas and saute until bright green, about 2 to 3 minutes. Season with salt and pepper, to taste. Sprinkle with the sesame seeds and toss.

5/20/20- made with 8 ribs, could have used more. I browned on stove top & then put into a 300 degree oven for 2 hrs. Removed ribs, put sauce into  a gravy separator. Next day, I put the good stuff in my pan & added ribs . Heated about 10 minutes & then added hoisin. Delicious! Will make again, maybe with boneless beef ribs I SEE AT Costco.

I made this a LONG, Long time ago and it was one of the BEST things I ever ate. Then I totally forgot who made it, etc. and have been trying to remember and then HUNT this recipe down!  It is that good and worth it.  It is a little time-consuming so all I can say is make enough to make it worth it and saving some. (I had unexpected guests and didn’t get much myself) I can’t wait to make it again (and again) You will be so pleasantly surprised that it is as good as it is!

Made this for a dinner party and received rav reviews! Accolades all night long and even months later people keeping talking about “the short ribs”. It was really easy to make. My first time making short ribs so was really pleased at how well they came out. Very flavorful and fall of the bone. Great for when you’re hosting because you can do most of the work beforehand.

I made this with lean short ribs that had no bones. I made extra as everyone said too. Wow. This was so good. The second day even better if possible. Everyone raved. The only slight change I might consider is a little less hoisin sauce. Either way, great stuff. One of my new favorites. I also made the potatoes and the snow peas. The whole meal was over the top.

Very good and full of flavor! I followed the recipe exactly except that instead of cooking it on the stove top i put it in the oven covered at 300 degrees F. I added the hoisin and put it in back in the oven as follows. Will make it again.
