Berry Iced Tea

Ingredients

  1. 4 berry-hibiscus herbal tea bags (recommended: Celestial Seasonings Red Zinger)
  2. 4 cups water
  3. 1/2 cup simple syrup, or to taste
  4. 1/2 orange, cut into wedges
  5. 1/2 lime, cut into wedges
  6. 8 frozen raspberries
  7. 1/4 cups sugar
  8. 1/2 cup water
  9. 1/4 teaspoon vanilla extract

Instructions

  1. Put tea bags in a heatproof pitcher.
  2. In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Cool tea and chill, covered, until cold, about 1 hour.
  3. Stir in simple syrup, to taste. Squeeze orange and lime wedges into tea and add wedges. Serve tea in tall glasses. Garnish with frozen raspberries.
  4. Add sugar and water to a microwave safe bowl. Microwave for 1 minute; stir until sugar is completely dissolved. Let syrup cool.

I’m not a huge fan of berry tea but needed a simple ice tea recipe for a bridal shower. It was much better than I was expecting although I only added about half of the simple syrup, taste testing as I went so not to make it too sweet.

The vanilla simple syrup is the star of this drink, it absolutely pops!
Do not make a mistake I did and add too much lime, follow the quantities exactly and the flavor will be great.

Not enough tea flavor and there wasn’t enough sugar in the simple syrup. You need to really love drinking sweet berries to enjoy this.

This MayDay cake is really delicious. We used a angel food cake instead of a yellow cake, and it sort of worked the same. It did take a long time to get all them ribbons where they needed to be, and I couldn’t find edible flowers or sprinkles for the ice cream sandwiches that went with them. Those kids were so dear, dancing around that MayPole. This was a great cake idea. Another great semmi-home-made dessert!
