Ingredients

  1. 1/4 cup olive oil
  2. 2 Spanish onions, peeled and sliced 1/2-inch thick
  3. 6 garlic cloves, thinly sliced
  4. 3 tablespoons balsamic vinegar
  5. 1 tablespoon sugar
  6. 3 teaspoons salt
  7. 1 teaspoon red pepper flakes
  8. 2 tablespoons chives, chopped

Instructions

  1. Pour the olive oil into a large skillet and place over high heat. Add the onions and garlic and cook, stirring to coat in oil. Reduce the heat to medium, add the balsamic, sugar, salt and red pepper flakes and cook 15 to 20 minutes, until the onions are velvety soft. Remove from the heat and let cool and add the chopped chives. Serve room temperature in a decorative bowl.

IF you enjoy onion, garlic, balsamic vinegar etc., …try this recipe. Delicious! Have served with variety of foods…always terrific…e.g. flank steak, burgers, monkfish, shrimp. Is also good served on toast points while watching TV!!! This is a keeper!

This recipe was wonderful. I made it for hamburgers but it would also be great with steaks or even grilled chicken. It really dressed up the hamburgers and was delicious!

I love onions but had never used balsamic vinegar before so wasn’t sure what to expect. I knew they’d be a little sour from the vinegar, but thought it would be more balanced with the sweet than they proved to be. I made this dish with a large sweet Maya onion (half quantity recipe), and w/o the chives since I didn’t have any. I did eat them and enjoyed them with the hamburger I made, but really just prefer them the way I usually make grilled onions: plain, with sometimes maybe a little extra sugar added to make them sweeter. I have some left over, so maybe I’ll add a little more sugar and try to balance the sweet and sour flavors more.
