Ingredients

  1. 7 ounces pizza dough
  2. 2 tablespoons heavy cream
  3. 3 ounces mozzarella knots, shredded
  4. 6 thin slices pancetta
  5. One 2-inch piece zucchini, thinly sliced
  6. 2 ounces herbed cream cheese

Instructions

  1. Place a pizza stone on the floor or the lowest rack of your oven. Preheat the oven to 500 degrees F.
  2. Pat the pizza dough into a 12-inch diameter circle and place it on a peel. Spread on the heavy cream, then the mozzarella. Place the pancetta slices on so there is pancetta on each slice of pizza (6 slices). Finally, add the zucchini and chunks of the cream cheese. Slide the pizza onto the stone and bake for 8 for 10 minutes.
  3. Buon Appetito!

This pizza is a winner and one of the best pizzas I have ever made. I have made it several times and have used pancetta, no meat at all, and pepperoni. Other than playing with the meat, I have made it exactly as written and it has been delicious every time. I like the absence of tomato sauce and with the brushing of the cream and the mozzarella, the zucchini and herb cream cheese, the flavor is outstanding. I was skeptical about the brushed cream, but it really adds a moistness and a nice platform for the other ingredients. I like adding thinly sliced onions as well. This one is a keeper!

I didn’t follow this recipe to the “t” as I had already made his Lemon Pizza, which is really good and very similar. I used the cream, about 4 oz. of mozzarella, and then used pancetta and some red onions and sprinkled on some fresh thyme. I also brushed the crust with olive oil to help it become golden. It was fantastic!! I don’t have a pizza stone but it cooked great! Definitely try this recipe, you won’t regret it!

We made this for company last night and liked it so much I made it for Sunday lunch today. I increased the cream and mozzerella just a little to help keep it from being too dry and we cut the pancetta into small pieces to make it easier to eat. This is a great pizza and just as easy to make as a traditional pizza.

Hello, I have this episode Tivo’d and just watched it last night. Georgio used lemon juice on ‘one’ of the pizzas he made for his party, but it wasn’t this one. This one is the one he won 2nd place in the Worlds Best Pizza contest. Also, in the episode, he mentioned that pancetta is smoked bacon, as did a previous reviewer – however- pancetta is actually unsmoked bacon, which has a distinctively different taste than smoked bacon. It is generally available anywhere, so I would only substitute bacon if you’re in a bind as the flavor really won’t be the same. Hope this helps.

I made this pizza tonight and it was fantastic. Since I could not find herb cream cheese i used chive and onion. Mmmm was it good. I recommend making this pizza as something different or if you are making multiple pizza make this one of them. I used pancetta, sliced very thin. You do not have to cook it first as it is very thin it will cook in the oven with the pizza. The difference between pancetta and bacaon is that bacon is a lot saltier. Fresh mozzerella is a must as is thinly slice zucchini.

First I have to say that I live in Staten Island, NY and after this show my husband and I took a ride to Brother’s Pizzeria (Giorgio Giove’s Pizzeria) and was quite disappointed to learn that he “only makes this pizza on special occasions)!! WHAT? How could you do a Throwdown competition where all of these people are going to see this pizza and want to try it for themselves and it not be on your regular menu??? So disappointed! We then decided to do the next best thing and get all the ingredients to make it oursleves. It was DELICIOUS! I still want to taste the real McCoy so Giorgio if you are reading this: Add this pizza on to your regular menu OR at least be ready to prepare it if someone asks!!!!
