Sweet Almond Crackers

Ingredients

  1. 52 individual butter crackers, such as Club
  2. 8 tablespoons (1 stick) salted butter
  3. 1 cup firmly packed brown sugar
  4. 1 teaspoon vanilla extract
  5. 1 cup sliced almonds

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Arrange the crackers in a single layer on a rimmed baking sheet so that the baking sheet is completely covered with a solid layer of crackers. Set aside.
  3. In a medium saucepan, melt the butter with the brown sugar and vanilla. Bring to a gentle boil over medium heat and boil until it starts to thicken, 1 to 2 minutes. Immediately pour the mixture over the crackers in an even layer. Use an offset spatula to spread the mixture all over the crackers. Bake for 5 minutes. Sprinkle the almonds all over, then let cool completely.
  4. When cool, break apart for a great snack.

I’ve made these several ways.I used cinnamon gram crackers and pecans yum! Then I made it with browned butter and with almond extract omg went from addiction to the need for intervention lol I also did gram crackers vanilla,walnuts when they came out of the oven I put some chocolate chips and a few mini marshmallows I found that if you put the nuts on first then put them in the oven they stick better. Just been changing it up for Xmas gifts , the idea’s are endless have some fun with it. Ree love you thanks!!

Very good and easy.  I usually use graham crackers for this type of candy (I think I actually prefer the finished product with graham crackers as they are more substantial), and this is the first time I have used  sliced almonds.  I made the mistake of putting the almonds on before baking, but it turned out fine.

These were absolutely delicious!  After reading the other comments, I lightly sprayed my cookie sheet before I laid the crackers down. I also put the almonds on before I put it in the oven. Came out absolutely perfect I wouldn’t change a thing

These are so addicting! I made these with saltines instead of butter crackers and I only had almond slivers and I toasted them before adding and they are delicious! Next time I make them, I am going to buy the round saltines and buy the sliced almonds so they look more like a cookie since they taste just like one.
