Air Fryer Puffed Butter Beans

Fresh carrots can be transformed into a wonderful side dish fairly quickly. This is kid-friendly.

Ingredients

  1. 1 (16 ounce) can large butter beans, drained and rinsed
  2. 1 tablespoon olive oil
  3. 1 teaspoon salt
  4. 1 teaspoon freshly ground black pepper
  5. 1 teaspoon garlic powder
  6. Optional: preferred seasoning blend

Instructions

  1. Stir together butter beans, olive oil, salt, pepper, and garlic powder in a bowl until combined. Spread out in the air fryer basket
  2. Preheat an air fryer to 400 degrees F (200 degrees C).
  3. Air fry until golden and crispy, tossing halfway through, for 12 to 15 minutes.
  4. Sprinkle with additional seasonings to taste if you like. Store in an air-tight container for 3 to 5 days.

The recipe indicates an option of a seasoning blend which I took advantage of, and that brought incredible flavor to these beans. I used hatch roasted chile seasoning blend and mixed it with the olive oil rather than sprinkling on after the beans were cooked. Butter beans are pretty neutral in flavor, and this seasoning brought just a subtle spiciness but did not dominate the flavor. They came out of the air fryer at 14 minutes, crispy on the outside but still soft on the inside, and we thought they were absolutely 5-star quality.

These make a very interesting, crunchy snack. I accidentally bought regular butter beans, not large, and they turned out ok. I cooked them for 13 minutes and did not add any kind of seasoning blend afterwards since they were plenty salty and all of my seasoning blends contained salt. These would be a fun addition to an appetizer buffet.

This was a fun recipe to try but mine turned out too dry and way too salty. Next time I make these I’d add more oil to see if that helps with the dryness and I’d cut the salt in half. For the seasoning blend I used a salt-free Italian blend which complimented the beans well. My husband agreed these were too dry for just regular snacking but suggested they’d be a good addition to a salad, so these still will be put to good use!
