Ingredients

  1. 1 pound fettuccine noodles
  2. 1 stick butter
  3. 1 cup heavy cream
  4. Salt and freshly ground black pepper
  5. 2 cups freshly grated Parmesan

Instructions

  1. Cook the pasta according to package directions. In a saucepan or skillet over low heat, warm the butter and cream. Season with salt and pepper. Place half of the Parmesan into a large serving bowl. Pour the warm butter/cream mixture over the top. Drain the pasta and immediately pour it into the bowl. Toss a couple of times, and then sprinkle in the other half of the Parmesan. Toss to combine, thinning with pasta water if necessary. Serve immediately as a main course or accompaniment to meat or salad. Delicious!

I absolutely LOVED this quick and easy meal. I’ve made a lot of Alfredo fettuccine that took forever to fix and weren’t close to being as wonderful as this one. Who would know this simple meal would be what I make from now own?

Perfecto! Easy and quick dinner the whole family LOVED!!! I made exactly as written except I added a pinch of nutmeg, a little garlic powder, and instead of fettuccine I used one pound of Cavatappi pasta, and added steamed chopped broccoli at the end for a one dish meal. Had to use a little pasta water to stretch the sauce with my additions, so next time I will increase the sauce by 50% -we like lots of sauce!
Be sure to not let the sauce come to a boil or your sauce (butter & cream) could separate.

To enhance this dish I cook mushrooms and either green pepper or frozen peas in garlic oil with a dash of white wine then add this mixture to the pasta and cream sauce with a dash of nutmeg. Cubed Italian ham can also be added to the cooked mixtue.

I love this recipe. The only thing I do differently is, I now use 1 1/2 cups parmesan and 1/2 cup Parmigiano reggiano. The flavor is rich and makes for an unbelievable sauce for dipping breadsticks too!

My husband followed the directions but the cheese clumped and we never had such a mess to clean up. Would not use this recipe again. we have made alfredo many times, and never was it like this

Great recipe! I stopped using store bought sauces years ago..it takes minutes to do your own. I add a tsp. of chicken bouillon base or a bouillon cube and lil garlic while melting butter.
