Instructions

  1. Toss 7 cups small cauliflower florets and 3 chopped plum tomatoes with 1/4 cup olive oil, 2 cloves minced garlic, 1 1/2 teaspoons cumin seeds, 1/4 teaspoon turmeric, a pinch of cayenne, 1/2 teaspoon salt, and pepper to taste on a baking sheet. Roast in a 450 degrees F oven, about 25 minutes. Sprinkle with lemon juice and chopped cilantro.

We precooked the cauliflower in boiling water until just tender. Pour 1 tin of Italian Tomatoes with 1 jar of tomato paste, add seasoning as desired, stir before adding cauliflower sections, add button mushrooms then stir before baking at 180 deg c for at least 30 minutes. A great vegan recipe.

Even with variations (canned tomatoes instead of fresh because out of season, curry powder instead of turmeric because I didn’t have any), this turned out fantastic! And even my meat and potatoes hubs went back for thirds…

This was great.  Easy and delicious.  I made it with green tomatoes because i had an abundance of them at the end of the growing season.  Next time, i may add some garbonzo beans to make it a full vegetarian meal.

This is a great recipe! I used 1 tsp of cumin powder instead of cumin seed and it was perfect. Easy, quick and delicious. Would definitely make again.
