Crostini with Thyme-Roasted Tomatoes

Ingredients

  1. 4 plum tomatoes, halved lengthwise
  2. Extra-virgin olive oil, for drizzling
  3. Kosher or sea salt and freshly ground pepper
  4. 1 to 2 teaspoons dried thyme
  5. 8 1/2-inch-thick slices baguette, cut on the bias
  6. 1 clove garlic

Instructions

  1. Preheat the oven to 275 degrees. Place the tomatoes cut-side up in a shallow baking dish. Drizzle with olive oil and sprinkle with salt, pepper and the thyme. Roast 1 hour 30 minutes to 2 hours, or until the tomatoes are very soft and slightly shrunken.
  2. Increase the oven temperature to 400 degrees. Place the baguette slices on a baking sheet, drizzle with olive oil and bake until golden brown, about 10 minutes. Rub the crostini with garlic and top each with a roasted tomato.

I loved this recipe but must confess to a couple of changes. I sliced the roma tomatoes in thin slices. They were ready in 20 minutes or so. Toasted the baguette slices, rubbed with garlic & placed tomatoes on top with mozzarella then back into oven til mozzarella melted. Topped with chiffonade basil. Gobbled up!

A real disappointment. Even after 3 hours of roasting, tomatoes were too juicy. The thyme on top tasted like sawdust, and the tomatoes were completely inedible.

Very tasty and easy. These have been a hit every time I make them. It’s great as is or you can add cheese or pesto to the crostini, but a definite go to recipe.
