Cold Peanut Soba With Chicken

Loosely inspired by Chinese sesame noodles, this recipe features soba instead of fresh wheat noodles tossed in a spicy peanut sauce. Shelled edamame, shredded rotisserie chicken, cucumbers and scallions add extra protein and a great crunch.

Ingredients

  1. 12 ounces soba
  2. 1 cup frozen shelled edamame
  3. 1/2 cup peanut butter
  4. 2 tablespoons rice vinegar (not seasoned)
  5. 1 tablespoon soy sauce
  6. 2 teaspoons grated peeled ginger
  7. 1 teaspoon sesame oil
  8. 1 teaspoon Asian chili sauce (such as Sriracha or sambal oelek)
  9. Kosher salt
  10. 1 cup shredded rotisserie chicken
  11. 1 cup diced cucumber
  12. 1/2 cup chopped scallions

Instructions

  1. Bring a large pot of water to a boil. Add the soba and edamame and cook as the noodle label directs. Reserve 1 cup cooking water, then drain the soba and edamame and run under cold water until cool.
  2. Whisk the peanut butter, vinegar, soy sauce, ginger, sesame oil and chili sauce in a large bowl. Add 1/2 cup of the reserved cooking water and whisk until smooth. Add the soba and edamame, season with salt and toss to combine (add more cooking water to loosen, if needed). Divide among shallow bowls and top with the chicken, cucumber and scallions.

I thought this was excellent. Great blend of spices with the peanut butter. Forgot to add cucumber, but will definitely next time.

Easy to put together. In my opinion too much peanut butter. Be sure to use UNseasoned rice vinegar. Next time I’ll use 1/4 c of peanut butter and use enough of the pasta water to make the sauce very thin. And I will use more ginger and NO chili sauce

The recipe was really easy & fast to put together. I think it might be better with slightly less peanut butter. I liked the hint of heat from the sriracha.

After I first made it, it was tasty with a good texture. After sitting in the fridge for a few hours the peanut butter separated from the sauce mixture! I don’t know if it’s because I used organic all natural peanut butter ?! Either way, disappointing

Pretty tasty. I added a red pepper, a little more soy sauce and a little more hot sauce. Other than that, I made it as written. Should have more chicken and less noodles, but that’s me. A good packed lunch.

My kids would love, but be aware many schools forbid peanuts at least in elementary school (with good reason given the increase in life-threatening allergies)

This was a great summer supper! I just substituted whole wheat linguine for the soba, and kept everything else the same. I agree with other reviewers that suggested the dish needed a little more spice, so I would add more Sriracha sauce next time. It made 4 generous portions with no leftovers!

LOVE this recipe.

I now keep buckwheat soba noodles and beans stocked for this recipe since it is so easy, plus I can use them for other things. I get the noodles at World Market but recently discovered I can get them cheaper at Ingles.

I do make some changes:
-I omit chicken usually unless I happen to have left over grilled chicken on hand.
-I use baby lima beans instead of edamae since they’re cheaper and not a huge change.
-I do not run the noodles and beans under cold water because I prefer warm food.
-Do not use green onions unless I already have them on hand. Have used scallions and cilantro instead before.
-Top with a decent amount of Srircha because that stuff is nom.
-Stir in more cucumbers because I can

I would say as long as you have an inclination toward asian or indian food made with a peanut sauce, you’re gonna like this. If you’re more the picky sort that sticks to swwet and sour and stir fry, this might not be for you.

Made this tonight! Followed the recipe exactly and it was refreshing! Lots of flavor. If your noodles are paste like, you overcooked them! Easy, fast and healthy!
