Yield: 1 cup pepitas

Ingredients

  1. 1 cup pepitas
  2. 1 teaspoon ground cinnamon
  3. 1/2 teaspoon ground allspice
  4. 1/2 teaspoon ground ginger
  5. 1/2 teaspoon kosher salt
  6. 1/4 teaspoon freshly ground black pepper
  7. 1/8 teaspoon ground nutmeg
  8. 2 tablespoons light brown sugar
  9. 2 teaspoons maple syrup

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Add the pepitas to a large skillet and toast over medium-low heat, stirring frequently, until golden brown and fragrant, 6 to 8 minutes.
  3. Meanwhile, combine the cinnamon, allspice, ginger, salt, pepper and nutmeg in a small bowl. Set aside.
  4. Remove the pepitas from the pan and return the pan to the stovetop. Add the brown sugar, maple syrup and 1 teaspoon water and cook, stirring constantly, until the mixture is combined and the sugar dissolves, 1 to 2 minutes. Stir in the spices, then turn off the heat. Add the toasted pepitas and toss until the seeds are evenly coated. Pour over the lined baking sheet and spread to cool completely.
  5. Break up slightly, then store at room temperature in an airtight container for up to two weeks.

Love this! I’ve made it 4 times and it’s the perfect food to satisfy my sweet and salty craving. Thank you!!

So delicious and easy! Like another reviewer mentioned it is a bit salty so I’ll cut that down next time.

So yummy! It tastes just like chai, but slightly salty to compliment the seeds. It’s the best pepitas I’ve ever had. I enjoy them ok at times, but this took them to another level. I saw it on The Kitchen and when I finally found the pumpkin seeds, I was excited to try it. Not disappointed at all.

This was so good. I made it twice and the second time was better. First time I used coconut nectar instead of maple syrup. I also forgot salt! Second time I followed exactly and added a few more nuts…it is so delicious

I’ve made this recipe twice within the span of a week to share with family and colleagues at work.  Those who love pumpkin seeds find these scrumptious and were begging for more.  Maple Chai Pepitas are great for snacking but also as a garnish in rice or salads and you get your vitamin B17.  Thanks!

I love this recipe! After I made it as stated it was sticky but I just kept breaking it apart as it cooled. Then I decided that it was a little sweet so I toasted another 3/4 cup and did not as the seasonings or sugars but added to the already cooked batch. Perfection! I will make these again maybe for gifts too. This will be the bomb on a salad!
