Ingredients
- One 10-ounce package sharp white Cheddar
- 1/2 cup packed, jarred pimentos, finely chopped
- 1/4 cup mayonnaise
- 1 tablespoon brine, reserved from pimento jar
- 1 clove garlic, finely chopped
- Kosher salt and freshly ground black pepper
- Hot sauce, such as Tobasco
- 16 slices toasted whole wheat sandwich bread
- 16 slices tomato
- 8 leaves red-leaf lettuce
Instructions
- Finely grate the cheese and transfer to a food processor. Add the peppers, mayonnaise, brine and garlic. Season with salt, pepper and hot sauce. Pulse until slightly chunky.
- Top half of the bread slices with 2 slices tomato, 1 leaf of lettuce and 1/4 cup of the cheese mixture. Top with the remaining bread. Cut into triangle quarters and serve.
