Homemade Donuts with Mexican Chocolate Sauce

Ingredients

  1. 1 cup whole milk
  2. 1/2 orange, zested
  3. 1/3 cup sugar
  4. 1/2 cup Mexican cocoa
  5. 1/2 cup light corn syrup
  6. 2 tablespoons bittersweet chocolate chips
  7. 1/2 cup sugar
  8. 1 teaspoon Chinese cassia cinnamon
  9. Donuts:
  10. 1/2 cup water
  11. 1 tablespoon Mexican vanilla extract
  12. 4 tablespoons butter
  13. 1 tablespoon sugar
  14. 1/2 teaspoon kosher salt
  15. 1 cup all-purpose flour
  16. Vegetable oil, for frying
  17. 4 eggs
  18. Brown paper bag

Instructions

  1. In a medium saucepan, over low heat, bring the milk, orange zest and sugar to a low simmer. Whisk in the cocoa, light corn syrup, and the chocolate chips. Stir until the mixture is smooth. Remove from the heat and reserve. 
  2. Cinnamon Sugar: 
  3. In a small bowl, combine the sugar and cinnamon Reserve. 
  4. Put the water, vanilla, butter, sugar, salt, and the orange zest into a medium saucepan and bring to a simmer over medium-high heat. Remove the mixture from the heat and add the flour. Stir with a wooden spoon until the flour is incorporated and begins to pull away from the sides of the pan, about 8 minutes. 
  5. Fill a large Dutch oven, over medium heat, halfway with vegetable oil and heat to 360 degrees F. Put the flour mixture into a large bowl. Using a hand mixer, slowly add the eggs 1 at a time. The mixture will break apart as you add each egg but will become smooth again once the egg is incorporated. Make sure each egg has been incorporated into the batter before adding the next. 
  6. Oil a 1-ounce ice cream scoop and scoop the batter into the hot oil. Fry the dough balls, in batches, until they are a deep golden brown on all sides. Test a fried donut to make sure that the center is cooked and then remove them from the oil. Frying will take about 8 minutes per batch. 
  7. Put a few donuts into a brown paper bag and pour in 2 tablespoons of the cinnamon sugar mixture. Close the bag and shake. Repeat steps. Serve with chocolate sauce for dipping.

The batter was too runny, and  it was not sweet at all.  Also,  you didn’t tell us whether to use salted or unsalted butter.

My batter had a smooth and thick consistency. I used a one ounce ice cream scoop. The donuts ended up being about the size of a large lemon. They were very light and airy but lacked sweetness. These were nothing like a traditional glazed donut texture. It was more similar to asian cream puffs with a light bread feel. They had a nice crust and soft interior. These would be good with a glaze rather than tossed in sugar. I plan to make a liquor chocolate sauce for dipping tomorrow. Overall these were tasty and very easy to make but don’t expect a traditional donut experience.

Batter way too runny, its like cake batter, no way to make a ball. I thought I did something wrong so I threw the first batch away, second batch came out same way. What a waste of time and ingredients!!!

I wanted to make some doughnuts. I kind of wish I would have gone to the store and bought a can of biscuits, like so many recipes suggest. So, I started to make the recipe according the directions. I agree with the other reviewers who stated that 4 eggs is way too many; after about 2 eggs the batter (i don’t think I could call it dough at this point was on the runny side. I started to fry it, and 350 degrees is way too hot to cook this, the “donuts” were super brown and still raw in the middle. I did not use an ice cream scoop, because I thought that was too big, so I used a deep spoon to scoop it in. The consistency of the donut is more like a fritter. I didn’t make the sauce, so I can only really comment on the donut part which is I am giving this recipe 3 stars instead of 2. I am giving the benefit of the doubt to the recipe and assuming the chocolate sauce makes up for the donut to give it an extra star. I won’t be making this again.

I don’t deep fry very often and for that reason I did use a candy thermometer for the oil. 360 degrees is way too high!! Also, the 4 eggs made the batter too watery to make actual dough balls. It poured more like pancake batter. On the up side, the flavor was absolutely delicious and I would simply lower the oil temp and use 2 eggs instead of 4. The chocolate sauce was a little too watery for my taste so I added more chocolate and cocoa so it thickened. Otherwise, also very tasty. Would make again!

I love how easy it is. I had to change it up a bit by using what i had. for the chocolate sauce i used whipping cream instead of the milk and nestle power coco for the chocolate and dark corn syrup. Instead of the zest I used 3 TB Watkins orange power. The sauce was perfect, it had a dark chocolate taste to it. The donuts are wonderful most people have the ingredients in their cabinet A perfect snack on a tight budget.
