Ingredients
- 8 chicken tenders or breast cutlets, flattened and cut in half
- Two 3-ounce packages cream cheese, softened
- 1 jalapeno pepper, seeded and finely chopped
- 16 slices bacon
Instructions
- Preheat the oven to 400 degrees F.
- Top each piece of chicken with 1 teaspoon cream cheese and 1/4 teaspoon chopped jalapeno. Roll up each filling-covered chicken piece and wrap with 1 slice of bacon, securing with a toothpick. Transfer to a baking sheet and place in the oven for 20 minutes, flipping halfway through.

You can buy jalapeño cream cheese. Just easier that way.
I omitted the cream cheese and jalapeño, seasoned the chicken with garlic & onion powder and paprika, cooked the bacon a little before wrapping the chicken and it was done, crispy and delicious in 20 minutes.

I had to cook for 40 minutes to get the bacon done enough! The flavor was great, but I should have seasoned the chicken.
What’s not to like? If it needs more flavor try adding taco seasoning to
the cream cheese or wrap up a green olive or a scallion too! Yum!

Not a lot of flavor even with bacon.

Will try cooking on a broiler pan, it took over 40 minutes and I finally turned on the broiler .
