Ingredients

  1. 1 ½ cups cooked quinoa
  2. 1 ½ cups pureed peaches
  3. 1 cup shredded coconut
  4. ¾ cup almond butter
  5. ½ cup dark brown sugar
  6. ¼ cup pureed cooked spinach
  7. 1 ½ teaspoons vanilla extract
  8. 2 cups rolled oats
  9. 1 cup all-purpose flour
  10. ½ cup dry milk powder
  11. 1 teaspoon ground cinnamon
  12. 1 teaspoon baking soda
  13. 1 teaspoon baking powder
  14. ¾ teaspoon salt

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Mix quinoa, peaches, coconut, almond butter, brown sugar, spinach, and vanilla extract together in a large bowl until well combined. Add oats and mix well.
  3. Mix flour, milk powder, cinnamon, baking soda, baking powder, and salt together in a small bowl. Add the flour mixture to the quinoa mixture. Mix until combined.
  4. Scoop mixture by large spoonfuls onto ungreased cookie sheets.
  5. Bake in the preheated for 15 to 18 minutes. Allow to set for 2 minutes on the baking sheet before transferring cookies to wire racks to continue cooling.
  6. Add chocolate chips to make it extra yummy. You can substitute any pureed fruit/veggie mixture.

I didn’t have peaches or spinach so I substituted pureed pumpkin, applesauce, a banana (with the peel) and cooked kale to equal the amount of pureed peaches and spinach requested. I doubled the recipe and added 2 cups of chocolate chips. These were DELICIOUS! MY KIDS LOVED THEM. They could be eaten as breakfast cookies too. The cookies did not spread at all so after the first batch I patted them down a little with the back of my measuring cup.
