Sesame Noodles With Mushrooms

Ingredients

  1. 8 ounces thin noodles
  2. 1/4 cup soy sauce
  3. 1/4 vegetable oil
  4. 3 tablespoons pure sesame oil
  5. 2 tablespoons sugar
  6. 2 tablespoons rice wine vinegar
  7. 1/2 teaspoon hot chile oil
  8. 4 cloves garlic, minced
  9. 4 tablespoons salted butter
  10. 8 ounces cremini mushrooms, thinly sliced
  11. 4 ounces shiitake mushrooms, thinly sliced
  12. 4 green onions, thinly sliced

Instructions

  1. Bring a large pot of water to a boil. Cook the noodles according to the package instructions in the boiling water. Drain and set aside.
  2. Mix together the soy sauce, vegetable oil, sesame oil, sugar, vinegar, chile oil and garlic in a small pitcher. Set aside.
  3. Add the butter to a large skillet over medium-high heat. When the butter has melted, add the mushrooms and cook until thoroughly browned, 5 to 7 minutes. Pour in the sauce and stir to combine. Remove the skillet from the heat. Add the noodles and toss to combine. Sprinkle over the green onions and give one final toss. Serve.

Delicious! I added steamed broccoli for a little green. Even the picky kiddos liked it and asked me to make it again.

Made this for lunch today with lots of stirfry veggies. I took the advice of other reviewer‘s and did not use the oil, I only used half of the brown sugar, and I did not have rice wine vinegar so I used Trader Joe’s Yuzu sauce instead and it worked fine. Next time I will probably make it the same and try a little bit of peanut butter that was also suggested. I think that would turn down the heaviness a bit. Overall, it’s not some thing that I am going to be putting in heavy rotation but it was just fine for a casual lunch at home with my husband.

It’s yummy.  But oh my god, way way way too oily.  I halved the vegetable oil and my mouth was still covered in an oil slick eating these noodles.  I’ll cut down on the vegetable oil next time, because it was still delicious and easy to make.
