Ingredients

  1. 1/4 cup gelatin powder
  2. 2 cups tart cherry juice
  3. 2/3 cup sugar
  4. 1 lime, zested and juiced
  5. Nonstick cooking spray, for the baking dish

Instructions

  1. Sprinkle the gelatin into 1 cup water and allow it to bloom, which will take about 5 minutes.
  2. Meanwhile, heat the cherry juice and sugar in a saucepan over a medium-high heat until the sugar has dissolved, about 2 minutes. Remove the pan from the heat and slowly whisk in the bloomed gelatin until completely dissolved. Add in the lime zest and juice, stirring to combine.
  3. Spray an 8-by-8-inch baking dish lightly with cooking spray. Pour the mixture into the pan and transfer to the refrigerator. Chill for 2 hours.
  4. Remove the pan from the fridge and tip the chilled gummy block onto a board. Cut into 1-inch cubes. Carefully remove the individual gummies onto a baking sheet and allow them to sit out overnight on the counter. This will help give them a more gummy texture. Pack into resealable bags or mason jars.

Tasty but not really gummis. Just smaller Knox blocks/jello jugglers in taste and texture. But like I said tasty.

These aren’t gummies. They are jello jigglers made with fruit juice. Also, it would have been nice to translate 1/4 cup gelatin powder into a quantity related to the way the powder comes packaged. I used 6 packets of unflavored gelatin powder, which was a little more than 1/4 cup.

Super easy to make! The cherry flavor didn’t make for the most flavorful gummies so I swapped the cherry juice out for normal grape juice and they turned out amazing!

Easy recipe. Even letting them sit out overnight as the directions said, they were still jello squares. No “gumminess” to it. A little disappointed.

Made the cherry ones and some pomegranate ones tonight…turned out pretty good so far, except some of the gelatin would not dissolve so had to pull the chunks out of it after set….for next time do you stir it to bloom or just let it sit on top?

This recipe is okay. I didn’t think it they had a lot of flavor and mine didn’t turn out like gummies even though I let them sit out over night. They turned out more like jello. I’m not sure what I did wrong. 🙁

I actually have a question……instead of cherry juice could you use something strawberry or raspberry? If so what would you suggest?
