Ingredients
- Canola oil spray
- 6 thick-cut slices good quality bacon
- 3 tablespoons chopped fresh chives
- 4 cups prepared pancake batter
- 8 ounces mascarpone
- 1 cup confectioners’ sugar
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 450 degrees F. Prepare a cupcake pan with canola oil spray.
- Prepare a broiler pan and place the bacon on the pan. Cook until well crisped, about 6 minutes. Remove from the oven and reserve 1 tablespoon bacon drippings.
- Reduce the heat to 350 degrees F. Mix the chives into the pancake batter and pour into the cupcake tins so that they are 3/4 full. Bake for 12 minutes.
- Meanwhile, in a medium bowl, add the mascarpone, confectioners’ sugar, maple syrup and the reserved bacon drippings. Stir well to combine and set aside. Crumble the cooked bacon and set aside.
- Remove the cupcakes from the oven and let cool on a cooling rack, about 10 minutes. Frost each cupcake with the bacon icing and sprinkle with the crumbled bacon.

These were a hit at a retirement brunch that I recently hosted. I thought I had Mascarpone in the fridge but it turned out to be Ricotta Cheese. Therefore I substituted cream chesse for the marscarpone. It was a bit on the sweet side. I like the idea of using the Marscarpone minus the powdered sugar and mixing the bacon in the batter with the chives. The dish just needed a little oomph and a little less sweet.
Huge hit at a family gathering and great recipe. I think next time I will omit the powdered sugar from the icing as it’s really not needed. When I blended the Marscapone cheese (must have and added 3 tablespoons or so of 100% Maple Syrup, nothing else was needed. I didn’t add bacon drippings to the icing. Next time I would add the bacon to the batter as when it’s in the icing it makes a mess trying to frost the cupcake and keep everything on top.
These are sooooo amazing….if you can find marscapone cheese, DO NOT replace it with cream cheese!!!! Please!! Its the yummy white goodness in tiramisu, so heavenly..its vital. the only thing I change is to add crumbled bacon to the pancake mix along with the chives. Heaven. Although, i am considering adding pistachio pudding mix to the batter next time. TRY THESE!!! They are a huge hit at parties!!
Five Star w/o a doubt.
I used bisquick which made things easy. I omitted the chives too. I took the advice of shanitao and added cinnamon and vanilla because you’re right it was bland… also added sugar, maple and bacon. Made cream cheese frosting. It took about 15 minutes to cook. Came out AWESOME!
This was a great dish. I added cinnamon and vanilla and bacon pieces to the pancake batter. Glad I did b/c it would have been super bland without it. Omitted the chives. The icing was amazing (used cream cheese instead of marscapone. I did let them cook a few extra minutes b/c they weren’t done after 12 minutes. I can’t wait to make them for our holiday gatherings.
I needed bake goods for a customer appreciation breakfast and tried these on my family tried a couple of different variations:
Original recipe with a twist and no chives- added vanilla,fresh ground nutmeg and cinnamon to pancake batter
Frosting-used cream cheese instead of marscapone and I used my food processor to blend bacon PC’s in drippings with powered sugar. My family did want them to cool!!!!

Great recipe! Packed with flavor. Allot of sugar buts its okay to indulge every once in a while.
Terrbily tempting, but I felt guilty eating this. So much sugar and with the bacon… although delighful, I felt regretful.
I have no idea how he came up with this amazing recipe! I made the pancake mix without chives, just vanilla, and made the icing from cream cheese, sugar, and 100% pure maple syrup! Then once I added the crushed bacon bits, I was in hevean!!!
