Jerk Seasoning

Ingredients

  1. 1 tablespoon allspice
  2. 1/4 teaspoon ground cinnamon
  3. 1/4 cup light brown sugar
  4. 1 teaspoon red pepper flakes
  5. 1/4 teaspoon ground cloves
  6. 1/4 teaspoon ground cumin
  7. 2 teaspoons salt
  8. 1 teaspoon freshly ground black pepper
  9. 2 tablespoons canola oil

Instructions

  1. In a medium bowl, combine all ingredients with 2 tablespoons of canola oil.

This isn’t really a jerk recipe because it’s missing at least 2 key ingredients, and is adding others which are not typical of true “jerk” seasoning. It’s missing Scotch Bonnet peppers/pepper sauce, lime juice, and thyme. It should not have red pepper flakes, and the brown sugar is really quite optional.

Mixed up this seasoning and marinated chicken in it for a day or so, then threw it on the grill. It was a huge hit. Definitely a keeper!!

Really good spice mix, I dipped chicken breast in whipped-egg, then coated it with this jerk spice instead of breadcrumbs..yummy.

This recipe was great, just rubbed it on the pork chops and let them sit in the fridge for a couple of hours. Let chops come to room temp and grilled to perfection. Oh and I didn’t have the cloves and it was still great without it.
Will be using it again. Even my picky 9 year old loved it.

I made this recipe and the husband absolutely loves it. Its great flavor…My only question is, are you supposed to put a sauce over the meat as well? I only ask because I’ve seen several recipes that calls for seasoning AND sauce.
