Root Beer Sloppy Joes on Pretzel Buns

Ingredients

  1. 1 pound white bread dough
  2. 1/4 cup baking soda
  3. 2 egg whites
  4. Pretzel salt, for sprinkling
  5. Butter, for greasing
  6. 3 tablespoons olive oil
  7. 1 cup diced onions
  8. 1 cup diced red bell pepper
  9. 3 cloves garlic, minced
  10. 1 pound ground beef
  11. 3 teaspoons chili powder
  12. 1 teaspoon dry mustard
  13. 1/2 teaspoon cayenne
  14. 1/4 cup tomato paste
  15. 1 tablespoon Worcestershire sauce
  16. 2 tablespoons maple syrup
  17. 2 tablespoons red wine vinegar
  18. 1 1/4 cups sassafras root beer
  19. Salt

Instructions

  1. For the pretzel buns: Preheat the oven to 400 degrees F.
  2. Form the dough into 4 buns. Make the desired slits on top of the buns and set aside.
  3. In a large pot, combine the baking soda and 4 quarts water. Bring to a boil and then add the buns; cook for 3 minutes. Remove the buns and set on a rack to dry. Brush with the egg whites and sprinkle with pretzel salt.
  4. Place the buns on a buttered baking sheet and bake for 12 minutes. Adjust the oven to 350 degrees F and continue baking until the buns are browned, another 15 minutes. Remove from the oven and let cool.
  5. For the sloppy joes: In a large saute pan, heat 1 tablespoon of the olive oil over medium heat. Add the onions, peppers and garlic, and cook until slightly softened, 5 minutes. Scrape into a bowl and set aside.
  6. Place the same skillet over high heat and add the remaining 2 tablespoons olive oil. Add the ground beef and cook until browned, breaking it up with a wooden spoon, about 6 minutes. Drain off the fat from the pan and add the chili powder, dry mustard and cayenne to the meat. Add the tomato paste, stirring to coat. Cook undisturbed for about 4 minutes to allow the tomato paste to caramelize.
  7. Add the onion mixture back to pan and then stir in the Worcestershire, maple syrup, red wine vinegar and root beer. Reduce heat to low and simmer until the liquid has reduced and the sauce thickened, 20 minutes. Serve hot on toasted pretzel buns. (Makes enough for 9 sandwiches.)

I did on Kiser rolls with the salt & added a little more than the recipe called for as far as spices & some salt because it needed some. Added fried onion rings & baby swiss cheese. I do have to say that it is better than sloppy Joe mix out of a can…doesn’t leave the after taste.

I only made the filling (no time for the pretzel rolls). It’s my new favorite sloppy joe recipe. Great balance of sweet & spicy.
