Ingredients
- 2 tablespoons extra-virgin olive oil
- 1/2 white or yellow onion, finely chopped
- Kosher salt
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/2 cup white wine
- 1 1/2 cups cooked navy beans
- 2 tablespoons chopped fresh oregano leaves (or 2 teaspoons dried)
- Freshly ground black pepper
Instructions
- In a small pan, over medium heat, add the oil. When the oil is hot add the onion with a pinch of salt and saute until soft, about 5 minutes. Add the garlic and cumin and cook until fragrant, about 2 minutes. Raise the heat and add the white wine. Cook until the wine has reduced by half. Stir in the beans and oregano and season with salt and pepper, to taste. Cook gently for 15 minutes. Transfer to a serving bowl and serve.

Good! I read below and added 1 cup of chicken stock ( I don’t prefer cooking with wine and other said it was dry with only1/2 cup) I also added 2 cloves of garlic ( I like me some garlic) and instead of cooking for 15 mins, I only cooked for 10.yummmm

Tonight for a side dish & they were disappointing. There wasn’t much flavor to them! I added some fresh spinach to add to the nutritional value & incorporated a little bit of freshly grated Parmesan cheese. Probably will not be making again….:(

A little dry for me but the rest of the family liked them. I used dry oregano and fresh oregano would be so much better. I will try that next time.

I used canned beans and the recipe turned out great. I really enjoy all of Melissas tips on saving money and will start cooking larger batches of dried beans and putting them into the freezer for later use. I think what I like about Melissa is her ability to make simple and delicious foods without using fancy exotic ingredients. Most shows have all sorts of ingredients that you wouldn’t buy because it’s either too expensive or something that would sit in the pantry for years before finally throwing it away. Simple and basic ingredients that she creates into delicious meals that even though simple still make it seem special. Thanks Melissa!
I tried this recipe when I had family coming over for a meal and I was surprised by how good they turned out. I had white beans in the freezer because I had previously soaked a whole bag over-night but then realized I had way too many for the recipe at the time. So I froze the rest. So I took them out and put in a pot to cook for a couple of hours. Then I drained them and followed Melissa’s recipe. I was surprised how much flavor they had and how well the ingredients worked together. I am making a big batch of these beans again today to go with bbq chicken. Really yummy recipe!
These beans were easy and delicious. I used canned navy beans and rinsed them before adding to the pan, and the result was great. I was skeptical about the amount of cumin so I only put one teaspoon and it was not overpowering at all. Will definately make again. Another awesome dish. Thanks Melissa.
